Nick’s Spicy Spanish Garlic Shrimp

This shrimp dish is the perfect mix of light, spicy and gourmet. Plus it’s super simple and easy to make. Great for a party appetizer. Make you you have bread to dip in the sauce; you won’t want to waste any.


Ingredients

  • A few Emerald BAMs! of red pepper flake

  • Half a lemon

  • About a pound of shrimp - preference for red Argentinian shrimp, but any will work

  • Handful of Cilantro (halfish of a bunch)

  • Good bread for dipping

  • A bulb of garlic - not a clove, a bulb. And if you think that isn’t enough, you’re probably right and you should add some more

  • A paycheck’s worth of good olive oil

  • Half a glass of white wine - Albariño if you want to be traditional and classy - but anything crisp and dry


INSTRUCTIONS

  1. Prep by chopping the garlic and Cilantro

  2. Add a good amount of olive oil to a pan. Like enough to get a centimeter or two layer.

    • Don’t let the olive oil to to it’s smoke point, get it low

  3. When the oil it hot, add the garlic and red pepper flakes

    • Add as much red pepper as you want, but I like it spicy

  4. As soon as the Garlic starts to brown even a little, toss in the shrimp

    • This will happen FAST, so be ready

  5. Stir for 10 mississippi’s then turn off the heat and continue stirring

  6. Throw the wine and most the chopped cilantro in

  7. Stir for a few more minutes until the shrimp is cooked

  8. After plating, finish with some flakey sea salt (or table) and a little cilantro
