Nduja Spilinga (Spicy Calabrese Sausage) Pappardelle Pasta

A perfectly savory and spicy pasta dish with spicy sausage. If you can’t find Nduja Spilinga, you can use any spicy sausage but try to get a spreadable one.


Ingredients

  • White Wine

  • Nduja Spilinga (Spicy Calabrese Sausage)

  • Peas

  • Parmasean Cheese

  • Extra Virgin Olive Oil

  • Pappardelle Pasta

  • King Oyster Mushrooms

  • A Leek

  • Cherry Tomatoes


  1. Cut the king oyster mushrooms into thin slices

  2. Brown the mushrooms

  3. After the mushrooms have cooked for a while add

    1. Sliced leak

    2. Tomatoes

    3. Wine

    4. Sausage

  4. After cooking for a few minutes, add peas and the cooked pasta

  5. Add some pasta water and Parmesan and mix

  6. Sprinkle extra parm on tap after plating
