Healthy (or not) Caldo Verde - Chorizo Kale Soup

A hearty and healthy soup Mexican-inspired soup perfect for fall.


Ingredients

Other ingredients:

  • 2-4 Potatoes (2 big golden or equivalent of any other)

  • 1 Yellow Onion

  • 8 gloves of garlic

  • Large box of Chicken Stock

  • 1 bunch of Kales

  • Pepper

Healthy version

  • Ground Chicken Chorizo

  • Avocado Oil

Tasty version

  • 3ish Pork Chorizo Links


Health version:

  1. Brown ground chicken chorizo in a large pan

  2. Add more avacado oil than y0u think you should (make it as oily as the same amount of pork chorizo would)

Tasty version

  1. Cut chorizo links into bite-seized pieces

  2. Cook in large pan until almost done

The rest of the steps

  1. While the meat cooks, rough chop the onion and garlic

  2. Put meat in a separate holding container but make sure you leave the grease/oil in the pan

  3. Add the onion and garlic to the greasy pan

  4. While those cook, shop the potatoes into thin pieces so they quickly cook

  5. After the onion and garlic have softened add the potatoes and chicken stock

  6. While the potatoes cook (about 10-20 min) remove the leave from the kale stems and tear them into small pieces

  7. Taste the soup so far and add salt, pepper, cumin as needed

  8. Use a stick blender to turn the soup into a creamy consistency

  9. Add the kale and chorizo meat

  10. Let simmer for 2-5 minutes while cooking

  11. Serve
